Sweet Bourbon Glazed Grilled Salmon

It is officially summer and this evening we enjoyed one of our very favorite summer grilled recipes. I have shared this recipe before - (but it is in an older post) - so I am just putting the recipe on here again for all of my new friends.

Sweet Bourbon Glazed Salmon
~~~
1/2 cup pineapple juice
2T soy sauce
3/4 cup brown sugar
2-3 tsp bourbon whiskey - (I use the good stuff!)
1/4 tsp cracked pepper
1/8 tsp garlic
1/2 cup vegetable or canola oil
2 large salmon fillets
handful of fresh cut chives
~~~
Marinade the salmon fillets for 2-5 hours.
Do not marinade for longer than 5 hours
(in this case - more is not better!)
~~~
Grill on tin foil that has a few holes punched in it.
Baste with reserved marinade
while grilling.
Enjoy!
~~~~
It is now officially summer - in more ways than one! Look what we just discovered is living in our garage! Every spring/summer - we tend to be "blessed" with kitties from who knows where. I think that every cat in 14 counties knows that we will take care of them and find the kitties a home! I have already found a home for this little one when she is ready to leave her Mommy.
~~~~
I am busily working on our pictures from our little trip to the Biltmore and also the Ronald McDonald dance. So many photos!!! So give me a little bit longer - and next up will be the photos of our charity dinner, dance and silent auction.
~~~
(you might want to check your garages and out buildings also~~~
maybe you are lucky too!)
Vicki

You know us Kentucky girls have to sneak some Bourbon in when we can. I love the blue Fiesta plate. Glad you have rested up from your trip.

I have my stray, actually I have started calling him Ray as stray sounded to cold. He is a wild kitty, and I am not able to touch him, i found his sister sooner and was able to pet her, so I had her fixed and found her a home. Ray I just feed.

The only animals I ever found in my garage are bunnies, dust bunnies that is! That salmon looks out of this world Vicki, I'm so glad you posted the recipe. We eat lots of salmon, but I can't wait to try this combination. Guess I'll just have to get my hands on some bourbon now!

I am so pleased you take care of the kitties and find him/her a good home. When one came knocking at our door, I couldn't help but care for her - Charlie is now 3 and such a delight to the whole family.

I haven't had my dinner yet - yours looks so delicious it is making me hungry!!

The grilled salmon looks so delicious, I am drooling now.
The kitten is such a pretty colour. Who could resist that gorgeous little face.
It seems we have a cat living in our bread oven in France. We have only seen it a couple of times, but there are definite signs of a cat living there.

Yummmm! Looks fantastic Vicki Girl!

My fav? Because here in Seattle Area we eat a LOT of Salmon,,,Try this sometime.

I buy Pre-made Pesto and mix it 50/50 with butter or "I can't believe it's not Butter olive oil blend" Set aside at room temp and

Bake or Grill Salmon
Cook some Whole Grain Pasta

Simply plate salmon and Pasta and put on a couple of dollops of pesto Butter and sprinkle Fresh Grated Parmeasan over Pasta...

I could eat this almost everyday!

Okay,,,,,,hungry now!

Love you~
